Paleo-friendly Raspberry Banana "Ice Cream"

Raspberry Banana Ice Cream: No Added Sugar, Cream or Guilt

I love ice cream, but I try to stay away from it because the full-fat versions tend to have lots of sugar and are highly caloric. Then there’s that quarter cup serving size. Really? Umm no. Then there are the low-fat and sugar-free ice creams, which are not bad, but they may have additives that aren’t the best.

This vegan and paleo-friendly Raspberry Banana “ice cream” has no cream or added sugar. It has only 4 basic ingredients – bananas, raspberries, cinnamon and pure vanilla extract. Yum! The best part of all — it’s so easy to make and you can eat a whole cup full if you want to with not one ounce of guilt. (more…)

Lemon Pound Cake

Mom’s Favorite – Lemon Pound Cake

My mom likes delicious, but simple pound cakes and nut cakes. So I wasn’t surprised when she asked if I would make her a lemon pound cake during the Christmas holiday. Pecan Cream Cake

Pecan Cream Cake
Christmas 2013: Pecan Cream Cake

RATING: 5 out of 5 Stars

This Pecan Cream Cake also known as  Italian Cream Cake was easy to make, yet took a little bit of time. The  recipe was a hit with my family and friends. It’s now requested for Thanksgiving, Christmas, and “just because”.

The recipe that I used is one of my favorite Southern recipes because when I am searching for ingredients, mixing, baking and serving it, I feel like I’m stepping in the shoes of my late grandmother, Alice Virginia. She made all of her cakes from scratch, including the one of my favorites that she made – Apple Jelly Cake.
